Spiced Chocolate Fondue
- 250ml cream
- 50ml milk
- 1 piece of pared orange zest
- 1 broken cinnamon stick
- ½ vanilla pod, split
- 1 chipotle chilli, split
- 1 tsp lightly crushed allspice berries
- 2 blades of mace
- A few cloves
- ½ tsp pink peppercorns, lightly crushed
- 1 tbsp ground ginger
- Pinch of sea salt
- 2 tbsp brandy
- 350g dark chocolate
- Fruit pieces, such as mango, orange and pineapple, to serve
- Pour the milk and cream into a saucepan with the orange zest, chilli, cloves, cinnamon, vanilla, mace, allspices, ginger and peppercorns and slowly bring to a simmer. Remove from the heat and leave to infuse until it returns to room temperature, then strain through a sieve into a clean saucepan.
- Add the chocolate to the cream mixture and gently melt, whisking constantly until very smooth. Transfer to a fondue bowl, and serve with skewers and fruit pieces (it will also work well with leftover cake pieces, too!).
