Spiced Chocolate Fondue

  • 250ml cream
  • 50ml milk
  • 1 piece of pared orange zest
  • 1 broken cinnamon stick
  • ½ vanilla pod, split
  • 1 chipotle chilli, split
  • 1 tsp lightly crushed allspice berries
  • 2 blades of mace
  • A few cloves
  • ½ tsp pink peppercorns, lightly crushed
  • 1 tbsp ground ginger
  • Pinch of sea salt
  • 2 tbsp brandy
  • 350g dark chocolate
  • Fruit pieces, such as mango, orange and pineapple, to serve
  • Pour the milk and cream into a saucepan with the orange zest, chilli, cloves, cinnamon, vanilla, mace, allspices, ginger and peppercorns and slowly bring to a simmer. Remove from the heat and leave to infuse until it returns to room temperature, then strain through a sieve into a clean saucepan.
  • Add the chocolate to the cream mixture and gently melt, whisking constantly until very smooth. Transfer to a fondue bowl, and serve with skewers and fruit pieces (it will also work well with leftover cake pieces, too!).
