Spiced Chocolate Fondue
- 250ml whipping cream
- 50ml whole milk
- A piece of pared orange zest
- 1 broken cinnamon stick
- 1⁄2 vanilla pod, split lengthways
- 1 chipotle chilli, split
- A few cloves
- 1 tsp lightly crushed allspice berries
- 2 blades of mace
- 1⁄2 tsp lightly crushed peppercorns
- 1 tbsp ground ginger
- 350g quality dark chocolate
- Pinch of sea salt
- 100ml ginger syrup
- Cubes of fruit cake, to serve
- Fresh fruits, to serve
- Put the cream, milk, orange zest, cinnamon, vanilla pod, chilli, cloves, allspice, mace, peppercorns, and ginger into a saucepan, slowly bring to the boil, then allow to cool to room temperature. Strain through a sieve.
- Break up the chocolate, and add it to the spiced cream. Melt over a gentle heat, whisking continuously until creamy and smooth. Transfer to a fondue bowl, light the candle, and tuck in with your fruit and cake pieces. Heaven!
