Spiced Cod Burgers
- 4 tbsp flour
- 1 tsp turmeric
- 1 lemon, zest only
- Pinch of chilli flakes
- 400g cod loin, cut into 4 fillets
- Oil for brushing
- 4 tbsp mayo
- 4 ciabatta rolls, halved and griddled
- 1 beef tomato, sliced
- Chutney, to serve
- Mix the turmeric, flour, lemon zest and chilli on a large plate and season with salt and pepper. Coat the fish fillets with the seasoned flour, then brush with a little oil and griddle for 4 mins on one side and 2 mins on the other.
- Serve the cod fillets in ciabatta rolls with mayo, chutney, sliced tomato and anything else you fancy. Delicious!
