Spiced Cod Burgers

  • 4 tbsp flour
  • 1 tsp turmeric
  • 1 lemon, zest only
  • Pinch of chilli flakes
  • 400g cod loin, cut into 4 fillets
  • Oil for brushing
  • 4 tbsp mayo
  • 4 ciabatta rolls, halved and griddled
  • 1 beef tomato, sliced
  • Chutney, to serve
  • Mix the turmeric, flour, lemon zest and chilli on a large plate and season with salt and pepper. Coat the fish fillets with the seasoned flour, then brush with a little oil and griddle for 4 mins on one side and 2 mins on the other.
  • Serve the cod fillets in ciabatta rolls with mayo, chutney, sliced tomato and anything else you fancy. Delicious!
