Spiced Cod Burgers

  • 4 tbsp flour
  • 1 tsp ground turmeric
  • 1 lemon, grated zest only
  • 400g piece of cod loin, cut into 4 fillets
  • Olive oil for brushing
  • 4 tbsp mayo
  • Pinch of chilli flakes
  • 4 ciabatta rolls, halved and lightly toasted
  • 1 large tomato, sliced
  • Pickles and sides, as you fancy
  • Mix the turmeric, flour, lemon zest and chilli flakes on a plate and season well with salt and pepper. Coat the fish fillets in the season flour, then brush with olive oil. Barbecue in a basket for 2-3 mins on each side, or until cooked through and flaky, or alternatively fry in a glug of oil for 4 mins on one side and 2 on the other.
  • Serve in a ciabatta roll with a slick of mayo, a slice of tomato and any chutneys or pickles you fancy. Yum!
