Spiced Lamb Burger with Homemade Onion Marmalade
- 500g lamb mince
- 1 tbsp ground cumin
- 2 chopped shallots
- 1 crushed garlic clove
- 2 tbsp olive oil
- 1 red onion, thickly sliced
- 1 tbsp dark brown sugar
- 2 tbsp red wine vinegar
- 4 burger buns
- Salad leaves, to serve
- Mix the mince with the garlic, shallots, cumin and salt and pepper. Shape into 4 fat patties and chill in the fridge. Meanwhile, fry the onion in a tbsp of oil for 15 mins until very soft but not browned. Mix in the vinegar and sugar and cook for 5 mins more.
- Brush the burgers with the remaining oil and grill for 5 mins on each side or until cooked through. Stuff into toasted rolls with some salad leaves and a dollop of the onion marmalade - perfection!
