Spiced Lamb Burger with Homemade Onion Marmalade

  • 500g lamb mince
  • 1 tbsp ground cumin
  • 2 chopped shallots
  • 1 crushed garlic clove
  • 2 tbsp olive oil
  • 1 red onion, thickly sliced
  • 1 tbsp dark brown sugar
  • 2 tbsp red wine vinegar
  • 4 burger buns
  • Salad leaves, to serve
  • Mix the mince with the garlic, shallots, cumin and salt and pepper. Shape into 4 fat patties and chill in the fridge. Meanwhile, fry the onion in a tbsp of oil for 15 mins until very soft but not browned. Mix in the vinegar and sugar and cook for 5 mins more.
  • Brush the burgers with the remaining oil and grill for 5 mins on each side or until cooked through. Stuff into toasted rolls with some salad leaves and a dollop of the onion marmalade - perfection!
