Spiced Lamb Burger with Red Onion Marmalade

  • 500g lamb mince
  • 1 tbsp ground cumin
  • 2 chopped shallots
  • 1 crushed garlic clove
  • 2 tbsp oil
  • 1 sliced red onion
  • 1 tbsp dark brown sugar
  • 2 tbsp red wine vinegar
  • 4 burger buns, salads and sides to serve
  • Mix the lamb mince, cumin, garlic, shallots and seasoning, and shape into 4 thick patties. Chill in the fridge until ready to cook.
  • Make the marmalade by heating 1 tbsp of oil in a small pan and cooking the onion for 15 mins or until very soft. Stir in the vinegar and sugar and cook for 5 mins or until sticky and glossy.
  • Preheat the grill. Brush the burgers with oil and grill for 7 mins on each side, or until cooked through. Toast the buns, stuff with peppery leaves and the burgers, and a good dollop of the red onion marmalade - perfect!
