Spiced Lamb Burger with Red Onion Marmalade
- 500g lamb mince
- 1 tbsp ground cumin
- 2 chopped shallots
- 1 crushed garlic clove
- 2 tbsp oil
- 1 sliced red onion
- 1 tbsp dark brown sugar
- 2 tbsp red wine vinegar
- 4 burger buns, salads and sides to serve
- Mix the lamb mince, cumin, garlic, shallots and seasoning, and shape into 4 thick patties. Chill in the fridge until ready to cook.
- Make the marmalade by heating 1 tbsp of oil in a small pan and cooking the onion for 15 mins or until very soft. Stir in the vinegar and sugar and cook for 5 mins or until sticky and glossy.
- Preheat the grill. Brush the burgers with oil and grill for 7 mins on each side, or until cooked through. Toast the buns, stuff with peppery leaves and the burgers, and a good dollop of the red onion marmalade - perfect!
