Spiced Lamb with Apricot Gravy

  • 1⁄2 tsp chilli flakes
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 3 small lamb chops
  • 1 tbsp olive oil
  • Cooked carrots, to serve
  • 150ml red wine
  • 1⁄2 chicken stock cube
  • 85g dried apricots, chopped
  • 55g pine nuts, chopped
  • Salt and pepper
  • Preheat the oven to 180C. Rub the spices into the lamb, then fry in a splash of oil for a minute or two on each side, before transferring to the oven and cooking for 6-8 minutes, or to your liking.
  • Make the gravy by heating the wine in a small saucepan, then adding the stock, apricots, and pine nuts. Bring to the boil and allow to reduce and thicken, then pour all over your lamb chops and carrots. Nice!
