Spiced Roasted Pineapple
- 25g butter
- 2 tbsp sugar
- ½ lemon, juice only
- ½ pineapple, peeled, cored and quartered
- Pinch of ground ginger and cinnamon
- Whipped cream, to serve
- Preheat the oven to 220C. Melt the butter, lemon juice and sugar in a frying pan and add the pineapple pieces, stirring to coat thoroughly.
- Add the cinnamon and ginger and place in the oven for 10 mins, or until the pineapple has softened and browned. Serve in a bowl with a dollop of cream, and enjoy!
