Spiced Scallops in the Shell

  • 12 whole scallops in the half shell
  • 2 tbsp finely diced red onion
  • 1 chopped red chilli
  • 2 tbsp chopped fresh coriander
  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • Arrange the scallops, open-side up, on a large baking tray and preheat your grill to a high setting. Mix the onions, coriander, chilli, soy sauce, lemon juice and olive oil in a small bowl, then spoon the dressing evenly over the scallops.
  • Place the scallops until the grill and cook for 6 mins or until golden and bubbling. Remove from the oven and serve immediately with lemon wedges for squeezing - the perfect seafood starter!
