Spiced Tomato and Green Bean Stew

  • 2 tbsp olive oil
  • 1 head of garlic, cloves sliced
  • 400g green beans, trimmed
  • 2 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp ground turmeric
  • 400g tomatoes, chopped
  • 400g tin of chopped tomatoes
  • 1 tsp sugar
  • Salt and pepper
  • Harissa oil to serve
  • Toasted peanuts, to serve
  • Heat the oil in a saucepan and add the garlic, then stir-fry for 2 minutes to soften. Chuck in the beans and cook for 5 minutes, then add the spices, tomatoes, tinned tomatoes, sugar, and plenty of seasoning.
  • Simmer for 20 minutes, then serve in bowls with a drizzle of harissa oil and some sprinkled peanuts.
