Spicy Bacon and Parsley Tagliatelle

  • 1 tbsp olive oil
  • 2 chopped spring onions
  • 3 rashers of bacon, sliced
  • 1⁄2 tsp chilli flakes
  • 1 x 400g can of cherry tomatoes, drained
  • 150g fresh tagliatelle, cooked al dente
  • 4 tbsp chopped parsley, to serve
  • Heat the oil in a frying pan, and fry the bacon slices for a couple of minutes until golden. Add the spring onion and chilli flakes, and fry for 3 minutes more. Pour in the tomatoes, cook for 3 minutes, then add the pasta and stir well to coat. Serve with plenty of fresh parsley stirred into the pasta - easy peasy!
