Spicy Battered Squid
- Sunflower oil for frying
- 750g fresh squid, cut into rings
- 150g flour
- ½ tsp cayenne pepper
- 2 tsp paprika
- 250ml sparkling water
- Chips, to serve
- Tartare sauce, to serve
- Dust the squid rings in a little flour, and heat a saucepan of oil to sizzling temperature. Sift the remaining flour, ½ tsp salt and the spices into a large bowl. Whisk in the sparkling water to make a batter, then dip in the squid before chucking in the sizzling oil to fry and puff up for 1 min. Drain on kitchen paper, and serve with homemade chips, lemon wedges and tartare sauce.
