Spicy Cauliflower Side

  • 1 tsp ground turmeric
  • 2 tsp hot paprika
  • 4 tbsp sunflower oil
  • 50g chopped ginger
  • 2 tsp cumin seeds
  • 1 cauliflower head, broken into florets
  • 3 tbsp chopped coriander
  • Mix the paprika and turmeric with 3 tbsp of water to make a paste. Fry the ginger and cumin seeds in the oil for about 30 seconds, then stir in the paprika paste and cook for 30 seconds more.
  • Reduce the heat and tip in the cauliflower, stirring well to coat in the spices. Add the lid and cook for 15 mins to soften, then remove the lid and increase the heat. Cook for 10 mins more, then scatter with coriander and serve as a delicious side for curry night!
