Spicy Chicken Wraps
- 180g chicken breast, thinly sliced
- ½ lime, juice only
- ½ tsp chilli powder
- 1 chopped garlic clove
- 1 tsp olive oil
- 2 large flour tortillas
- 1 avocado, halved
- 1 roasted red pepper, sliced into strips
- Chopped coriander
- Mix the chicken breast slices with the chilli powder, lime juice and garlic, then fry in the oil for a couple of minutes or until cooked through. Meanwhile, warm the wraps in a dry pan for a minute.
- Place half an avocado onto each wrap and squash with a fork. Pile on the sliced red peppers, followed by the chicken and the coriander. Wrap up into a fajita shape or fold over and cut in half, then serve as a light and tasty lunch or snack.
