Spicy Chicken Wraps

  • 180g chicken breast, thinly sliced
  • ½ lime, juice only
  • ½ tsp chilli powder
  • 1 chopped garlic clove
  • 1 tsp olive oil
  • 2 large flour tortillas
  • 1 avocado, halved
  • 1 roasted red pepper, sliced into strips
  • Chopped coriander
  • Mix the chicken breast slices with the chilli powder, lime juice and garlic, then fry in the oil for a couple of minutes or until cooked through. Meanwhile, warm the wraps in a dry pan for a minute.
  • Place half an avocado onto each wrap and squash with a fork. Pile on the sliced red peppers, followed by the chicken and the coriander. Wrap up into a fajita shape or fold over and cut in half, then serve as a light and tasty lunch or snack.
