Spicy Crab Noodles
- 250g flat rice noodles
- 2 sliced onions
- 4 sliced garlic cloves
- 2 sliced chillies
- 2 glugs of sunflower oil
- 3.5 tbsp ketchup
- 2.5 tbsp soy sauce
- 2.5 tbsp fish sauce
- 200g white and brown mixed crabmeat
- 1 lime, juice only
- Cook the noodles according to packet instructions, then drain and refresh under warm water. Set aside. Meanwhile, fry the onions in the oil in a wok until golden, then add the chillies and garlic and fry for 2 mins more.
- Mix the soy sauce, ketchup and fish sauce in a bowl. Add the sauce mixture to the wok and let it bubble for a minute, then mix in the noodles and crabmeat and toss together to combine, then stir in the lime juice and serve with a scattering of coriander.
