Spicy Crab Noodles

  • 250g flat rice noodles
  • 2 sliced onions
  • 4 sliced garlic cloves
  • 2 sliced chillies
  • 2 glugs of sunflower oil
  • 3.5 tbsp ketchup
  • 2.5 tbsp soy sauce
  • 2.5 tbsp fish sauce
  • 200g white and brown mixed crabmeat
  • 1 lime, juice only
  • Cook the noodles according to packet instructions, then drain and refresh under warm water. Set aside. Meanwhile, fry the onions in the oil in a wok until golden, then add the chillies and garlic and fry for 2 mins more.
  • Mix the soy sauce, ketchup and fish sauce in a bowl. Add the sauce mixture to the wok and let it bubble for a minute, then mix in the noodles and crabmeat and toss together to combine, then stir in the lime juice and serve with a scattering of coriander.
