Spicy Kale with Onion and Tomato
- 2 tbsp olive oil
- ½ onion, finely chopped
- 1 garlic clove, finely sliced
- ½ tsp ground cumin
- ½ tsp ground coriander
- Pinch of chilli flakes
- 1 tomato, deseeded and chopped
- 85g kale, trimmed and blanched for 3 mins in boiling salted water, drained
- Salt and pepper
- Fry the onion and garlic in a little oil for a few minutes to soften. Add the spices, stir well, and fry for a further 2 minutes. Chuck in the tomatoes and the kale, cook for 3 more minutes, then season with salt and pepper. Serve hot as a side.
