Spicy Paneer
- Veg oil for frying
- 400g paneer cubes
- 1 tsp coriander seeds
- Thumb-sized piece of ginger, finely chopped
- 1 onion, chopped
- 4 tomatoes, chopped
- 1.5 tsp chilli powder
- 1 tsp fenugreek seeds
- 1 tsp garam masala
- 1 tbsp runny honey
- Chopped coriander, shredded spring onion to serve
- Heat 1 cm of oil in a frying pan and fry the paneer until golden brown. Drain on kitchen paper. In a separate frying pan, gently toast the coriander seeds for a minute, then add 1 tbsp of oil, the ginger, onion and chilli powder, and cook for 10 mins until softened and golden.
- Tip in the tomatoes, cook for 5 mins until collapsed. Add the rest of the spices and the honey, and simmer for a few mins. Tip the paneer into the sauce and mix to coat, then serve with your garnishes and enjoy.
