Spinach Paneer
- 750g baby spinach
- 3 tbsp oil
- 1 tsp cumin seeds
- 1 onion, chopped
- Thumb-sized piece of ginger, sliced
- 1.5 tbsp chopped garlic
- 2 green chillies
- 2 tsp ground coriander
- 250g paneer, cut into cubes
- 1 tsp garam masala
- 4 tbsp cream
- 2 tsp lemon juice
- Blanch the spinach for 3 mins until wilted, then drain and blend to a paste in a food processor. Heat the oil in a large pan, add the cumin and fry for a minute, then add the onion and fry for 5 mins to soften. Add the ginger, garlic, whole chillies, and cook for a minute more. Add salt to taste, coriander, and finally the spinach. Simmer for 3 minutes.
- Add the paneer cubes to the mixture (you can lightly fry the paneer first if you want it a little crispy), along with garam masala and cream. Cook for a few minutes, then stir in the lemon juice. Serve with rice or naan - yum!
