Spring Onion and Bacon Linguine
- 8 slices of unsmoked bacon, chopped
- 1 tbsp olive oil
- 1 sliced bunch of spring onions
- 200ml crème fraîche
- 300g peas
- 350g linguine
- Grated parmesan, to serve
- Fry the bacon in the oil for 5 mins or until golden. Add the onions and cook for a minute, then remove from the pan and set aside. Add the peas to the pan to cook for 1 minute, then stir in the crème fraîche and return the bacon and onions to the pan. Stir to combine.
- Cook the linguine according to pack instructions, then drain and stir into the sauce. Serve in bowls with plenty of parmesan, and enjoy!
