Steak Fajitas with Corn Salsa
- 1 avocado
- 2 limes, 1 juiced, 1 cut into wedges
- 100g sweetcorn
- 1 tomato, chopped
- ½ bunch of chopped coriander
- 1 tsp garlic olive oil
- 2 red onions, cut into wedges
- 140g beef steak, sliced
- 1 tbsp fajita or Mexican steak seasoning
- 4 flour tortillas
- Sliced jalapeños, to serve
- Mash the avocado with the lime juice, and stir in the tomato, sweetcorn, half the coriander and the seasoning, before setting aside for when you serve. Heat the oil in a griddle pan and cook the onions for 8-10 mins, or until lightly charred and softened. Remove to a warmed serving dish.
- Dust the meat with the fajita seasoning and some pepper, then cook for 3 mins in the pan before adding the onions. Meanwhile, warm the tortillas. When ready, serve the steak and onions with the salsa and tortillas, and some lime wedges and jalapeños. Perfect!
