Steak Tacos with Corn Salsa
- ½ sliced red onion
- 2 limes, 1 cut into wedges, 1 juiced
- 1.5 tbsp oil
- 350g sweetcorn, drained
- 400g sirloin steaks
- 300g soft taco wraps
- 50g chopped coriander
- 1 finely chopped red chilli
- 100g crumbled feta
- Add the onion to a bowl with the lime juice and some seasoning, and toss well. Set aside. Fry the corn in 1 tbsp of oil for 6 mins, or until lightly caramelised, then tip into the bowl with the onion.
- Brush the steaks with the remaining oil, season well and fry for 2 mins on each side. Remove to a plate and leave to rest for 5 mins. Meanwhile, mix the coriander and chilli with the corn salsa, and toss everything together. Thinly slice the steaks and serve with the wraps, salsa, lime wedges and a scattering of crumbled feta, and share with friends.
