Steak with Chargrilled Vegetables and Chipotle
- 1 red pepper, sliced
- 1 red onion, cut into 6
- 3 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp ground coriander
- 200g sweetcorn
- 400g tin of black beans, drained
- 400g sirloin steak
- 100g yoghurt
- 1 tbsp chipotle paste
- 1 lime, zest and juice
- ½ bunch coriander, chopped
- Heat a griddle pan and toss in the pepper, onion, 2 tbsp of oil and the spices. Griddle the spiced veggies for 10 mins or until charred, then tip into a bowl and mix in the beans and sweetcorn. Rub the steaks with the rest of the oil and some seasoning. Cook for 3 mins on each side or to your liking, then set aside to rest.
- Mix the chipotle paste, lime juice and zest, and a pinch of salt into the yoghurt. Stir the coriander into the vegetables, spoon onto two plates and serve with the sliced steak drizzled with the chipotle yoghurt.
