Steak with Chargrilled Vegetables and Chipotle

  • 1 red pepper, sliced
  • 1 red onion, cut into 6
  • 3 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp ground coriander
  • 200g sweetcorn
  • 400g tin of black beans, drained
  • 400g sirloin steak
  • 100g yoghurt
  • 1 tbsp chipotle paste
  • 1 lime, zest and juice
  • ½ bunch coriander, chopped
  • Heat a griddle pan and toss in the pepper, onion, 2 tbsp of oil and the spices. Griddle the spiced veggies for 10 mins or until charred, then tip into a bowl and mix in the beans and sweetcorn. Rub the steaks with the rest of the oil and some seasoning. Cook for 3 mins on each side or to your liking, then set aside to rest.
  • Mix the chipotle paste, lime juice and zest, and a pinch of salt into the yoghurt. Stir the coriander into the vegetables, spoon onto two plates and serve with the sliced steak drizzled with the chipotle yoghurt.
