Steak with Chimichurri
- 2 x sirloin steaks
- 2 tsp oil
- 1 tsp sea salt
- 1 yellow bell pepper, chopped
- 1 red chilli
- 1⁄2 tsp chilli flakes
- 2 garlic cloves
- 20g parsley
- 10g each of basil, tarragon, and chives
- 1 tbsp white wine vinegar
- 150ml olive oil
- Salt and pepper
- Make your classic chimichurri sauce by blitzing all of the ingredients together in a food processor, until well combined. Transfer into a bowl, and set aside.
- Place your griddle pan over a high heat, until smoking. Rub the steaks with oil, season with salt, and then cook on the griddle for 4 minutes. Flip, cook for another 3 minutes for medium rare, and leave to rest for at least 5 minutes. Slice thickly, spoon over the chimichurri, and serve immediately. Perfection!
