Steak with Chimichurri

  • 2 x sirloin steaks
  • 2 tsp oil
  • 1 tsp sea salt
  • 1 yellow bell pepper, chopped
  • 1 red chilli
  • 1⁄2 tsp chilli flakes
  • 2 garlic cloves
  • 20g parsley
  • 10g each of basil, tarragon, and chives
  • 1 tbsp white wine vinegar
  • 150ml olive oil
  • Salt and pepper
  • Make your classic chimichurri sauce by blitzing all of the ingredients together in a food processor, until well combined. Transfer into a bowl, and set aside.
  • Place your griddle pan over a high heat, until smoking. Rub the steaks with oil, season with salt, and then cook on the griddle for 4 minutes. Flip, cook for another 3 minutes for medium rare, and leave to rest for at least 5 minutes. Slice thickly, spoon over the chimichurri, and serve immediately. Perfection!
