Steak with Goulash Sauce

  • Drizzle of olive oil
  • 2 onions, sliced
  • 1 green capsicum, diced
  • 2 sliced garlic cloves
  • 1 tsp smoked paprika
  • 85g cherry tomatoes, halved
  • 1 tbsp tomato purée
  • 1 tsp veg stock powder
  • 2 x 125 beef steak, rubbed with oil
  • 200g baby spinach, wilted
  • Sweet potato fries, to serve
  • Heat 1 tsp of oil in a pan, and fry the onions for 5 mins to soften. Stir in the garlic and capsicum, then cover and cook for 5 mins more. Stir the paprika into the onions, then pour 150ml water into the pan and stir in the tomatoes, purée, and veg stock. Simmer for 10 mins.
  • Pan-fry the steak for 2-3 mins on each side, or to your liking. Rest for a few minutes, then serve with a hearty helping of the goulash, and a big pile of sweet potato fries. Yum!
