Sticky Kale and Butter Bean Side

  • A glug of olive oil
  • 2 x 400g tins of butter beans, drained
  • 4 tbsp balsamic vinegar
  • 3 tbsp brown sugar
  • 150g roughly chopped kale
  • Preheat the oven to 220C. Heat the oil in a roasting tin, then add the butter beans with 2 tbsp of balsamic vinegar, 2 tbsp of brown sugar and plenty of seasoning. Roast for 15 mins.
  • Toss in the kale and mix well. Add another 2 tbsp of vinegar, another glug of oil, and 2 more tbsp of brown sugar. Roast for another 5 mins until everything is crisp and a little charred. Serve as a side for a roast dinner or barbecue.
