Sticky Mango Chicken Wings
- 1.2kg quality chicken wings, cut in half
- 2 grated garlic cloves
- 1 tbsp Cajun seasoning
- ¼ tsp nutmeg
- 2 tbsp oil
- 280g chopped mango
- 2 tbsp mango chutney
- 1 chopped red chilli
- 1 lime, juice only
- Toss the wings in a bowl with the Cajun seasoning, garlic, nutmeg, oil and some salt and pepper. Mix well, cover and leave in the fridge overnight.
- When ready, preheat the oven to 200C. Spread the marinated wings on a lined baking tray and cook for 25 mins or until cooked through. Meanwhile, add the mango, chutney, chilli and lime juice in a blender and whizz until smooth. Season well, then remove the chicken from the oven and slather with the sauce. Return to the oven or finish on a barbecue for 3 mins on each side, or until sticky and irresistible!
