Sticky Soy Aubergines
- 4 baby aubergines, halved lengthwise
- 2 tbsp clear honey
- 1 tbsp olive oil
- 1 crushed garlic clove
- 2 tbsp soy sauce
- Pinch of chilli flakes
- 1 tsp chopped coriander leaves
- Salt and pepper
- Preheat the oven to 200C. Toss the halved aubergines with the oil, soy sauce, honey and chilli flakes, then add to a frying pan to stir fry for 4 mins. Season well with salt and pepper.
- Transfer the pan to the oven and roast for 5 mins, then sprinkle with chopped coriander and serve as a delicious side to a range of meat or vegetarian dishes.
