Sticky Turkey with Cauliflower and Rice

  • 300g jasmine rice
  • 150g snow peas, blanched
  • 1.5 tbsp veg oil
  • 500g turkey mince
  • 500g cauliflower, florets chopped
  • 1 chopped onion
  • 2 tbsp garlic and ginger paste
  • 1.5 tbsp honey
  • 1 tbsp sweet chilli sauce
  • 2 limes, juice only
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce
  • 110g spinach leaves
  • 15g chopped coriander
  • 10g mint leaves, chopped
  • Cook the rice to pack instructions and add the snow peas to the rice for the last 2 mins of cooking time. Drain. Meanwhile, fry the mince, cauliflower and onion in the oil for 15 mins or until golden and cooked through. Add the ginger and garlic paste, and cook for 1 minute more.
  • Add the chilli sauce, honey, lime juice, soy and fish sauce to the mix and simmer for 3 mins. Remove from the heat, stir through the herbs and the spinach to wilt. Divide the rice and snow peas between plates, top with the turkey mixture and scatter with more herbs to serve.
