Strawberry and Feta Tart
- 100g creme fraiche
- 4 thyme sprigs, leaves picked
- 100g crumbled feta
- ½ crushed garlic clove
- ½ lemon, zest only
- Pinch of dried chilli flakes
- 320g ready-rolled puff pastry
- 200g sliced strawberries
- Preheat the oven to 200C. Mash the thyme, garlic, feta, creme fraiche, lemon zest and chilli in a bowl until smooth, then season with salt and pepper. Unroll the pastry onto a baking sheet and score a border about 1cm from the edges.
- Spread the cream mixture over the pastry, then scatter with the sliced strawberries and add a good grind of black pepper. Bake for 25 mins, or until golden and puffed, then serve with some more thyme leaves sprinkled over the top. Unusual, but undeniably delicious!
