Strawberry and Turkey Salad

  • 400g turkey breast mini fillets, flattened to 1cm thick
  • 2 lemons, 1 zested and juiced, 1 sliced
  • 3 crushed garlic cloves
  • 1 tbsp maple syrup
  • 2 tsp olive oil
  • Pinch of poppy seeds
  • 180g baby spinach leaves
  • 1 sliced avocado
  • 200g quartered strawberries
  • 10g basil leaves, torn
  • Add the bashed turkey fillets, sliced lemon, garlic and some seasoning to a deep pan and cover with water to submerge. Simmer for 10 mins, or until the turkey is cooked through, then drain, transfer the turkey to a plate and leave to slightly cool.
  • Whisk together the lemon juice, zest and maple syrup, then mix in the oil and poppy seeds with some seasoning. Shred the turkey between 2 forks, then divide the avocado, spinach leaves, strawberries and basil between 2 plates. Top with the turkey, drizzle with the dressing and serve.
