Strawberry and Turkey Salad
- 400g turkey breast mini fillets, flattened to 1cm thick
- 2 lemons, 1 zested and juiced, 1 sliced
- 3 crushed garlic cloves
- 1 tbsp maple syrup
- 2 tsp olive oil
- Pinch of poppy seeds
- 180g baby spinach leaves
- 1 sliced avocado
- 200g quartered strawberries
- 10g basil leaves, torn
- Add the bashed turkey fillets, sliced lemon, garlic and some seasoning to a deep pan and cover with water to submerge. Simmer for 10 mins, or until the turkey is cooked through, then drain, transfer the turkey to a plate and leave to slightly cool.
- Whisk together the lemon juice, zest and maple syrup, then mix in the oil and poppy seeds with some seasoning. Shred the turkey between 2 forks, then divide the avocado, spinach leaves, strawberries and basil between 2 plates. Top with the turkey, drizzle with the dressing and serve.
