Stuffed Jalapeños with Prosciutto

  • 200g cream cheese
  • ½ tsp smoked paprika
  • 50g grated mature cheddar
  • 12 jalapeños, cut in half lengthways, seeds removed
  • 8 slices of prosciutto, cut lengthways into 3
  • 1 tbsp chopped chives
  • Preheat the oven to 200C and line a baking sheet with paper. Mix the cheeses, paprika and chives in a bowl, then place a spoonful of the mixture into the cavity of each jalapeño. Wrap each jalapeño with a strip of prosciutto and bake for 15 mins or until the ham is crisp and the stuffing is golden and melted.
