Sun-dried Tomato and Pecorino Spaghetti
- 350g spaghetti
- 1 sliced onion
- 3 sliced garlic cloves
- 80g sliced sun-dried tomatoes
- 2 tsp chilli flakes
- 1 lemon, grated zest only
- 30g shaved pecorino
- 3 tbsp olive oil
- Chopped basil leaves
- Boil 1 litre of water in a large saucepan with plenty of salt. Add all the ingredients except the cheese, oil and basil, and boil for 10 mins or until the pasta is al dente. Drain, leaving a little pasta water in the pan. Stir in the olive oil, pecorino and basil leaves, then serve with plenty of black pepper.
