Sun-dried Tomato and Pecorino Spaghetti

  • 350g spaghetti
  • 1 sliced onion
  • 3 sliced garlic cloves
  • 80g sliced sun-dried tomatoes
  • 2 tsp chilli flakes
  • 1 lemon, grated zest only
  • 30g shaved pecorino
  • 3 tbsp olive oil
  • Chopped basil leaves
  • Boil 1 litre of water in a large saucepan with plenty of salt. Add all the ingredients except the cheese, oil and basil, and boil for 10 mins or until the pasta is al dente. Drain, leaving a little pasta water in the pan. Stir in the olive oil, pecorino and basil leaves, then serve with plenty of black pepper.
