Super Easy Vegan Pho

  • 100g rice noodles
  • 1 tsp Vegemite
  • 1 tsp veg oil
  • 50g brown mushrooms, sliced
  • 1 leek, sliced
  • 2 tbsp soy sauce
  • To Serve
  • 1 sliced red chilli
  • ½ bunch mint, leaves picked
  • Handful of salted peanuts
  • Sriracha or similar
  • Pop the noodles in a bowl and cover with boiling water, then leave to stand for 10 mins before draining and refreshing in cold water. Set aside. Meanwhile, mix the vegemite with 500ml of boiling water and set aside.
  • Heat the oil in a saucepan, and add the leek and mushrooms. Cook for 10-15 mins, until well softened and starting to colour, then add the soy sauce and vegemite mix. Simmer for 5 mins, then divide the noodles into bowls and ladle over the broth. Top with chilli, mint, peanuts and sriracha, and enjoy.
