Super-Loaded Sweet Potato Fries
- For the Fries
- 2 tbsp cornflour
- ¼ tsp sea salt
- 3 tsp smoked paprika
- 800g sweet potato, cut into thick slices
- 3 tbsp veg oil
- 400g chicken thighs (optional), chopped
- 1 tsp garlic granules
- 2 capsicums, sliced
- 150g cherry tomatoes, halved
- Salt and pepper
- For the Toppings
- 4 tbsp mayo
- 2 grated garlic cloves
- 1 tbsp chilli sauce
- 60g grated Cheddar
- 2 sliced spring onions
- 1 tbsp chopped coriander
- Preheat the oven to 220C. Mix the cornflour, salt, and 2 tbsp of smoked paprika in a bowl. Add the potatoes and mix well to coat, then pour in 2 tbsp of oil and mix again. Divide between two lined baking trays and cook for 20-25 mins.
- Tip the chicken pieces into a bowl and add the remaining oil, smoked paprika, garlic, and salt and pepper. Mix well and leave to marinate for 15 mins. Fry the chicken and capsicums together for 8 mins, or until golden. Add the tomatoes, and cook for 2 mins more.
- Mix the mayo with the garlic. Divide the fries between serving plates, and top with grated cheese, then the chicken and capsicum mix, then the chilli sauce, garlic mayo, spring onions, and coriander. Enjoy!
