Surimi Salad
- 200g flat rice noodles
- 1 diced cucumber
- Handful of salad radishes, sliced
- 200g surimi or seafood sticks, sliced
- 20g mayo
- 150g yoghurt
- Pinch of garlic salt
- Small bunch of dill, finely chopped
- Break the rice noodles up into smaller pieces, then add to a bowl and cover with boiling water. Leave to soften for 15 mins, then drain and refresh under the cold tap.
- Combine all of the ingredients, including the softened noodles, in a salad bowl by folding them together. Season well, and serve as a delicious side dish or starter.
