Surimi Salad

  • 200g flat rice noodles
  • 1 diced cucumber
  • Handful of salad radishes, sliced
  • 200g surimi or seafood sticks, sliced
  • 20g mayo
  • 150g yoghurt
  • Pinch of garlic salt
  • Small bunch of dill, finely chopped
  • Break the rice noodles up into smaller pieces, then add to a bowl and cover with boiling water. Leave to soften for 15 mins, then drain and refresh under the cold tap.
  • Combine all of the ingredients, including the softened noodles, in a salad bowl by folding them together. Season well, and serve as a delicious side dish or starter.
