Surimi Salad
- 1 diced cucumber
- 200g rice noodles
- Handful of sliced radishes
- 200g surimi / crab sticks, cut into pieces
- 20g quality mayo
- 150ml yoghurt
- Pinch of garlic granules
- Chopped dill
- Gently break up the rice noodles, then tip into a bowl and cover with boiling water. Leave to one side to soften for 15 mins, then drain and cool. Combine all of the ingredients in a salad bowl, folding them together gently. Serve immediately, and enjoy.
