Surimi Salad

  • 1 diced cucumber
  • 200g rice noodles
  • Handful of sliced radishes
  • 200g surimi / crab sticks, cut into pieces
  • 20g quality mayo
  • 150ml yoghurt
  • Pinch of garlic granules
  • Chopped dill
  • Gently break up the rice noodles, then tip into a bowl and cover with boiling water. Leave to one side to soften for 15 mins, then drain and cool. Combine all of the ingredients in a salad bowl, folding them together gently. Serve immediately, and enjoy.
