Sweet and Sour Barbecued Prawns

  • 2 tbsp olive oil
  • 1 crushed garlic clove
  • 2 tbsp soy sauce
  • 2 tbsp runny honey
  • 2 limes, 1 juiced and zested, 1 quartered
  • 2 tbsp chopped coriander
  • Pinch of dried chilli flakes
  • 16 large prawns, cleaned and peeled
  • 4 soaked long wooden skewers
  • Mix the oil, garlic, soy, honey, lime juice and zest, coriander and chilli, and season liberally. Pour the mixture all over the prawns and leave to marinate for at least 15 mins in the fridge.
  • When ready to cook, thread 4 prawns and 1 lime quarter onto each skewer. Barbecue for 2-3 mins, turning halfway and brushing with the remaining marinade, until pink. Serve immediately with a fresh green salad or Asian slaw.
