Sweet ‘n’ Sour Chicken Thighs

  • 1 tbsp olive oil
  • 2 chicken thighs
  • Salt and pepper
  • 1⁄2 onion, chopped
  • 55g sundried tomatoes in oil
  • 2 tbsp soy sauce
  • 1 tbsp white wine vinegar
  • 1 tbsp clear honey
  • Small handful of chopped parsley
  • 2 sprigs rosemary, to garnish
  • Heat up the oil in a frying pan, then season and fry the chicken thighs until golden all over.
  • Add the onion to the pan, and fry for a few minutes to soften. Pour in the honey, white wine vinegar, soy sauce, and sundried tomatoes, and simmer for 3-4 minutes until the chicken is cooked through and sticky with the glaze. Stir in the chopped parsley, and serve hot garnished with rosemary.
