Sweet ‘n’ Sour Kale with Anchovies Salad

  • 400g shredded kale
  • 4 tbsp olive oil
  • 4 sliced garlic cloves
  • 2 chopped anchovies
  • 1 tsp golden caster sugar
  • 1 tbsp red wine vinegar
  • Cook the kale in a pan of boiling water for about 4 minutes, or until just tender. Drain, then place the empty pan back on the heat with the oil. Drop in the garlic and anchovy, and sizzle for 1 minute. Add the sugar and the vinegar, stir well, and sizzle for a minute more. Toss the kale back into the pan, mix well, and serve this healthy and tasty side dish warm.
