Sweet Potato and Capsicum Soup
- 1 chopped onion
- 1 chopped carrot
- 2 celery stalks, chopped
- 1 whole sweet potato, chopped
- 1 red capsicum, chopped
- 2 chopped garlic cloves
- 400g tin of plum tomatoes
- 1 tbsp olive oil
- 900ml veg stock
- 1 tsp smoked paprika
- Add the carrot, onion, celery, capsicum, potato, garlic and tinned tomatoes to a saucepan and simmer for 7 mins. Pour the stock into the pan with the paprika and some seasoning, and cook for 25 mins. Once everything has softened, whizz with a hand blender until smooth, then serve with flatbreads and a drizzle of olive oil.
