Sweet Potato and Capsicum Soup

  • 1 chopped onion
  • 1 chopped carrot
  • 2 celery stalks, chopped
  • 1 whole sweet potato, chopped
  • 1 red capsicum, chopped
  • 2 chopped garlic cloves
  • 400g tin of plum tomatoes
  • 1 tbsp olive oil
  • 900ml veg stock
  • 1 tsp smoked paprika
  • Add the carrot, onion, celery, capsicum, potato, garlic and tinned tomatoes to a saucepan and simmer for 7 mins. Pour the stock into the pan with the paprika and some seasoning, and cook for 25 mins. Once everything has softened, whizz with a hand blender until smooth, then serve with flatbreads and a drizzle of olive oil.
