Sweetcorn Fritters with Mango Sauce
- 100g flour
- 1 tsp baking powder
- 2 egg yolks
- 3 tbsp milk
- Salt and pepper
- 2 egg whites
- 1⁄2 tin of sweetcorn
- For the Mango Salsa
- 1 tbsp butter
- 3 tbsp sweetcorn
- 1⁄4 red chilli, diced
- 1⁄2 mango, finely chopped
- 3 tbsp fresh coriander
- Preheat the oven to 220C. Whisk the flour, baking powder, and egg yolks together, then add milk to make a batter. Season well. In a separate bowl, whisk the whites until stiff, and fold into your batter along with the sweetcorn. Pour portions of the mixture onto a baking sheet, and bake for 10 mins or until puffed up and set.
- Mix all of the salsa ingredients in a pan (apart from the coriander). Add a little water, and simmer for 5 mins. Add the coriander and stir through, then serve alongside the fritters.
