Sweetcorn Fritters

  • 1 ear of sweetcorn, kernels removed with a sharp knife
  • 2 beaten eggs
  • 2 tbsp milk
  • 2 tbsp plain flour
  • Salt and pepper
  • 2 tbsp olive oil
  • Salsa and relishes to serve
  • Place all of the ingredients, except for the olive oil and salsa, into a bowl, and mix well together until a batter is formed.
  • Heat the oil in a frying pan, and toss a big spoonful of the batter into the very hot oil. Cook for 2-3 minutes on each side until golden brown, then drain on the kitchen paper to allow them to crisp up. Serve hot with salads and salsa.
